Mashed Sweet Potatoes
This is a portion of the recipe in Cailee Eats’ Apple Cider Pulled Pork Recipe which I’ve modified for the pressure cooker. But I’ve saved these mashed potatoes separately because they make a great side for other meals. In fact, I’d recommend scaling this recipe so you have more!
Summary
- Prep Time: 5 minutes
- Cook Time: 20 minutes
- Servings: 6
Ingredients
- 3 lbs sweet potatoes
- 1 pinch salt
- 4 Tbsp butter
- 1/3 cup heavy cream
- garlic powder
- pepper
Directions
- Peel and chop sweet potatoes: 3 lbs into evenly-sized chunks. Cut smaller to cook them faster.
- Place the sweet potatoes in a pot and cover with water and salt: 1 pinch. You can pre-boil the water for faster cooking.
- Bring the water to a boil, then reduce the heat and simmer 15 minutes or until tender.
- Drain the water using a colander. Let the potatoes sit a moment to get rid of extra moisture.
- Add butter: 4 Tbsp, heavy cream: 1/3 cup, garlic powder, more salt, and pepper and mash until mostly creamy. Add more cream or seasonings to taste.
