This is a recipe from @carlo.martx on Instagram and TikTok which was sorely lacking in details which is fine for him because he mainly looking to sell olive oil.

The original recipe called for Buffalo burrata, but we actually liked the sauce so much we would be happy to make this meal without it. We served it with a salad and bread for dipping in olive oil and balsamic vinegar.

Ingredients

  • 1-2 shallots
  • olive oil
  • minced garlic
  • haved cherry tomatoes
  • 1 1/4 cups (or 300 ml) cream
  • 160 g Parmesan cheese
  • 200 g gnocci
  • Buffalo burrata
  • olive oil
  • fresh basil

Directions

  1. Finely dice shallots: 1-2 (or 1/4 an onion) and saute the shallots in a generous amount of olive oil.
  2. Add minced garlic and haved cherry tomatoes and cook till the tomatoes soften.
  3. Add cream: 1 1/4 cups (or 300 ml), Parmesan cheese: 160 g, salt, and pepper; stirring regularly.
  4. While the sauce thickens, cook gnocci: 200 g in boiling water. When it rises (usually in about 2 minutes), transfer to the sauce.
  5. Plate dish and optionally serve with Buffalo burrata, topped with olive oil, and fresh basil.
