Creamy White Chicken Chili

Ingredients
- 1 yellow onion
- 2 cloves garlic
- 1 lb boneless skinless chicken breasts
- 2 15oz cans great northern beans
- 1 15oz can of whole kernel corn
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 3/4 tsp oregano
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper
- 2 4oz cans diced medium green chilies
- 8oz cubed cream cheese
- 1/4 cup half and half
- avocados
- sour cream
- tortilla strips
- shredded Monterey jack or Mexican cheese
Directions
- Dice yellow onion: 1, mince garlic: 2 cloves, and trim excess fat from boneless skinless chicken breasts: 1 lb
- Open, drain, and rinse 15oz cans great northern beans: 2. Open and drain 15oz can of whole kernel corn: 1.
- Add the chicken to bottom of slow cooker or pressure cooker and top with onion, garlic, salt: 1 tsp, black pepper: 1/2 tsp, cumin: 1 tsp, oregano: 3/4 tsp, chili powder: 1/2 tsp, cayenne pepper: 1/4 tsp, great northern beans, corn, 4oz cans diced medium green chilies: 2. Top with diced onion, minced garlic, great Northern beans, green chiles, corn, chicken broth and cilantro. Stir.
- Stir before covering and cooking in a slow cooker on LOW for 8 hours, on HIGH for 3-4 hours, or in a pressure cooker on HIGH for 20 minutes.
- Remove chicken to shred before returning to slow/pressure cooker.
- Add cubed cream cheese: 8oz and half and half: 1/4 cup, stir, then cover and cook on HIGH for 15 minutes (not under pressure), or until chili is creamy and slightly thickened.
- Stir well and serve with avocados, sour cream, tortilla strips, shredded Monterey jack or Mexican cheese
Tip: To get a smoother blend of cream cheese, whisk the soften cream cheese and a few ladles of chili to a small mixing bowl before adding to the pot with the half and half.
