We were looking for a higher protein breakfast that didn’t just taste like eggs and found this recipe from bbcgoodfood.com.

We would like to try adding another scoop of protein powder to increase the protein content more but might need to adjust for consistency. Some other recipes we’ve looked at also added greek yogurt which would be interesting to try.

Ingredients

  • 75 g old fashion/rolled oats
  • 1 banana
  • 3 eggs
  • 2 tbsp milk (dairy or alternative)
  • 1 tbsp baking powder
  • 3 tbsp protein powder
  • 1 pinch cinnamon
  • blueberries or chocolate chips (optional add-ins)
  • maple syrup
  • any desired toppings like butter, peanut butter, whipped cream, and cut fruit

Directions

  1. Chop up old fashion/rolled oats: 75 g in a blender until broken down
  2. Add banana: 1, eggs: 3, milk (dairy or alternative): 2 tbsp, baking powder: 1 tbsp, protein powder: 3 tbsp, and cinnamon: 1 pinch and blend for about 1 minute till smooth.
  3. Heat a drizzle of oil in a pan on medium heat
  4. Pour pancakes in the pan in batches, should be about 4 inches in diameter after spreading.
  5. Cook for about 2 minutes, until the batter bubbles and the underside is golden
  6. Can add blueberries or chocolate chips (optional add-ins) immediately after the first pour for different flavors.
  7. Flip and cook for 1 minute more till cooked through.
  8. Transfer pancakes to a plate before starting the next batch.
  9. Serve with maple syrup and any desired toppings like butter, peanut butter, whipped cream, and cut fruit
